Defining Fermentation
Fermentation is a metabolic process that occurs in the absence of oxygen (anaerobic conditions) where microorganisms like yeast or bacteria convert carbohydrates, such as sugars, into acids, gases, or alcohol. It is essentially a way for cells to generate energy (ATP) when oxygen is not available for cellular respiration.
Key Types of Fermentation
The most common types include lactic acid fermentation and alcoholic fermentation. Lactic acid fermentation produces lactic acid from glucose, vital for making yogurt, cheese, and in muscle cells during strenuous exercise. Alcoholic fermentation, primarily performed by yeast, converts sugars into ethanol and carbon dioxide, a key process in brewing beer and making wine and bread.

A common example of fermentation is in baking bread. Yeast, a single-celled fungus, is mixed with flour and water. The yeast consumes the sugars present in the flour and performs alcoholic fermentation, producing carbon dioxide gas. This gas gets trapped in the dough, causing it to rise, and the alcohol evaporates during baking, contributing to the bread's flavor.

Fermentation is crucial in various industries, from food and beverage production to pharmaceuticals. It preserves food, enhances flavor, and creates distinct textures in products like kimchi, sauerkraut, and sourdough.
